Ingredients

  • 1 lb boneless, skinless chicken breast
  • 3 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp crushed red pepper flakes
  • 1 lemon
  • ½ cup chicken broth
  • ¼ cup dry white wine
  • 2 tbsp chopped fresh parsley
  • to taste salt and pepper
  • for garnish Grated Parmesan cheese
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 3 cloves garlic, minced
  • 1 tbsp butter
  • ½ cup grated Parmesan cheese
  • 2 tbsp heavy cream (optional)

Instructions

  1. 1Prepare the rice: Melt butter in a saucepan over medium heat. Add garlic and sauté for 1 minute. Stir in rice and toast for 2 minutes.
  2. 2Add chicken broth, bring to a boil, then reduce heat to low, cover, and cook for 18-20 minutes until rice is tender and liquid is absorbed.
  3. 3Stir in Parmesan cheese (and heavy cream if using). Season with salt and pepper. Keep warm.
  4. 4Make the chicken scampi: Heat olive oil and butter in a large skillet over medium-high heat. Add chicken strips, season with salt and pepper, and cook until golden and cooked through, about 5-7 minutes. Remove and set aside.
  5. 5In the same skillet, add minced garlic and red pepper flakes. Sauté for 30 seconds, then add lemon juice, chicken broth, and white wine. Simmer for 3-4 minutes until slightly reduced.
  6. 6Return chicken to the skillet, toss to coat in the sauce, and simmer for another 2 minutes. Stir in parsley.
  7. 7Serve chicken scampi over garlic Parmesan rice, garnished with extra Parmesan and parsley.

    Pound the breasts even

    Flatten chicken breasts to about 1/2 inch thick so they cook through in 4 to 5 minutes a side without drying out the thin end.
