Grate your own parmesan
Pre-shredded cheese has anti-caking starch that turns the sauce gritty. Grate a 4-ounce block fine and stir it in off the heat.
Save a cup of pasta water
Reserve 1 cup before draining and add it a splash at a time to loosen the sauce and help it cling.
Keep the heat low
Cream sauce breaks if it boils. Hold it at a bare simmer and stir 2 to 3 minutes until it coats the back of a spoon.
Sear the chicken separately
Cook seasoned breasts 5 to 6 minutes per side until 165°F, rest 5 minutes, then slice and lay it over the pasta.
