Ingredients

  • 4 Zucchini
  • 1/4 cup Parmesan Cheese
  • 2 tbsp Dan-O’s Original Seasoning
  • 2 tbsp Olive Oil
  • Salt & Pepper (optional)

Instructions

  1. 1Preheat oven to 350 degrees. Wash your zucchini. Cut off the ends, and then cut it into quarters longways. Cut zucchini quarters into roughly 4 inch pieces and add them to a mixing bowl.
  2. 2In a separate bowl, mix together your parm cheese and Dan-O’s, then salt and pepper to taste.
  3. 3In your mixing bowl, drizzle in your olive oil and then add the parmesan mixture. Fold the zucchini slices over a few times to coat them all in the mix. Add them to a baking sheet with a wire rack at least an inch of space between each one. Sprinkle on extra parm and Dan-O’s mixture for added flavor and crunch.
  4. 4Bake zucchini fries at 350 degrees for about 17 minutes and then broil for 4 or 5 minutes to crisp them up. Remove from oven and allow to cool for 5 minutes before serving.
  5. 5Dip in ranch and serve with your favorite protein. Enjoy!

Why Garden Cooking Is Its Own Category

August tomato beats a January tomato by every metric — the recipes that showcase that are worth their own shelf.

Cooks on Pepper build the summer rotation around fresh basil, blistered cherry tomatoes, spiralized zucchini, and quick-pickled squash.

The best garden recipe is the one that lets the vegetable be the point — a little olive oil, salt, and heat and you're done.

Quick Tips

  1. 1

    Salt tomatoes first

A pinch of salt on sliced tomato ten minutes before serving draws out flavor and firms texture.

  2. 2

    Basil goes in last

Add torn basil at the very end — heat turns it black and bitter.

  3. 3

    Zucchini needs a hot pan

Overcrowded, low-heat zucchini turns to mush — high heat, single layer, done in five minutes.

  4. 4

    Blister cherry tomatoes

Two minutes in a screaming-hot skillet until they burst — pasta sauce done.
