Freeze the cheese first
Breaded sticks need at least 1 hour in the freezer, or 2 if you have time, so the coating sets before the cheese melts out.
Double the breading
Dip in flour, egg, then bread crumbs, then repeat the egg and crumbs a second time for a shell that holds.
Watch your oil temp
Keep the oil right around 350°F and fry 30 to 60 seconds a side; hotter oil browns the crust before the middle softens.
Salt tomatoes for skewers
For Caprese Skewers, salt the cherry tomatoes 10 minutes ahead and drain the liquid so the basil and mozzarella pearls stay dry.
