Lemon, Yogurt, And Chicken On A Sheet Pan

A little lemon juice, olive oil, and yogurt turn plain chicken breast into something everybody at the table will actually finish. Most of these come together in one pan or one bowl, so the cleanup is short.

Cooks on Pepper reach for this collection on the nights they want vegetables and protein in the same dish without standing at the stove, or when there's leftover chicken to stretch into wraps and bowls for lunch.

Every recipe here leans on the same handful of things you likely have: the Mediterranean Chicken & Chickpea Plate, the Mediterranean Chicken Bowl with zucchini and tri-colored peppers, Sheet pan Mediterranean chicken, Greek Chicken Gyros, the Mediterranean Chicken Meatball Bowl, and a Mediterranean Chicken Zucchini Bake.

Quick Tips

  1. 1

    Pound the breasts even

Flatten thick chicken breasts to about 3/4 inch so they cook through in 15 to 18 minutes without the thin end drying out.

  2. 2

    Marinate at least 30 minutes

Yogurt, olive oil, lemon juice, and garlic need 30 minutes to work; up to 8 hours in the fridge is even better.

  3. 3

    Cut vegetables the same size

Chop zucchini and bell peppers into 1-inch pieces so they roast evenly alongside the chicken at 425°F.

  4. 4

    Rest before slicing

Let the chicken sit 5 minutes off the heat so the juices stay in the meat instead of on the cutting board.
