Pound the breasts even
Flatten thick chicken breasts to about 3/4 inch so they cook through in 15 to 18 minutes without the thin end drying out.
Marinate at least 30 minutes
Yogurt, olive oil, lemon juice, and garlic need 30 minutes to work; up to 8 hours in the fridge is even better.
Cut vegetables the same size
Chop zucchini and bell peppers into 1-inch pieces so they roast evenly alongside the chicken at 425°F.
Rest before slicing
Let the chicken sit 5 minutes off the heat so the juices stay in the meat instead of on the cutting board.
