Open in Pepper →A pot of sweet potatoes goes a long way. Mash them plain with salt and pepper and they sit next to pork chops on a Tuesday; stir in brown sugar and butter and they belong on the holiday table.
Cooks on Pepper reach for these when the main dish is already handled and the side has to be easy — a bag of sweet potatoes, a pot of water, and whatever's in the butter dish.
Every recipe here starts with mashed sweet potatoes and goes its own direction: Ruth's Chris Sweet Potato Casserole with melted butter and sugar, Grandma Hill's Sweet Potato Casserole with packed brown sugar, a plain mashed sweet potato, Boursin mashed sweet potatoes with heavy cream, and Sweet Potato Mash with Coconut Milk and a pinch of ginger.
Cut even chunks
Peel and cut the potatoes into 1 1/2-inch pieces so they all cook through at the same time, about 15 to 20 minutes in boiling water.
Drain them well
Let the potatoes sit in the colander 2 to 3 minutes, or return them to the hot pot for a minute, so the mash isn't watery.
Warm the dairy first
Heat the butter, cream, or coconut milk before stirring it in — cold liquid cools the potatoes down and makes them stiff.
Bake casseroles uncovered
For the casseroles, bake at 350°F for about 30 minutes so the topping browns instead of steaming under foil.
