Cook the noodles soft
Go 1 to 2 minutes past al dente — cold pasta firms up in the fridge, and slightly soft elbows soak up the dressing better.
Rinse under cold water
Drain and rinse 30 seconds in a colander to stop the cooking and wash off starch so the salad doesn't turn gluey.
Dress it warm
Add about half the mayonnaise dressing while the macaroni is still a little warm so it absorbs, then stir in the rest before serving.
Chill at least 4 hours
Cover and refrigerate 4 hours or overnight; the flavors need that time, and it will need a splash of milk and a stir before it hits the table.
