Ingredients

  • 2 cans Chipotle Peppers in Adobo Sauce
  • To taste Salt
  • Boneless Skinless Chicken Thighs

Instructions

  1. 1Buy Chipotles in Adobo if you don’t have it. 7 ounces is probably enough for two pounds of thighs
  2. 2Take your boneless skinless chicken thighs and make sure they’re “unrolled” and open so all the surface area is exposed. Put them in a bowl with the contents of the can. Leave for at least 3 hours to marinate.
  3. 3Grill. If your indoor ventilation is bad, cook this outside. The peppers will aerosolize capsaicin otherwise which without proper ventilation is the equivalent of pepper spraying your whole kitchen.
  4. 4Make sure your thighs get to 190-195 degrees Fahrenheit internal temp.
  5. 5Remove from grill, let sit 5 minutes.
  6. 6Cut them into strips or however you choose to plate it. I use mine in rice bowls and to make quesadillas for a late night meal.
