Why Asian Cooking Is Easier to Make Low-Carb Than You'd Think

The sauces are already low-carb. Soy sauce, sesame oil, rice vinegar, gochujang, fish sauce, garlic, ginger — all minimal carbs, all maximum flavor. The carb bomb is just the rice underneath.

Swap the rice for cauliflower rice, the noodles for zucchini ribbons or shirataki, and the wrappers for lettuce cups. The protein-and-sauce part of the dish stays exactly the same.

Sauce templates that transform cauliflower rice from side dish to star are among the most-saved recipes on Pepper.

Quick Tips

  1. 1

    Coconut aminos sub soy sauce

Same umami, no soy, half the sodium. Worth a try if soy feels heavy.

  2. 2

    Cornstarch is the trap

Most Asian recipes call for it to thicken — sub xanthan gum at a quarter of the volume.

  3. 3

    Cook the cauliflower rice dry

Microwave or dry-pan first to evaporate moisture. Wet cauliflower rice = sad stir fry.

  4. 4

    Hot wok, fast cook

Asian-style stir-fries take 4-6 minutes total. Low and slow turns everything to mush.
