Open in Pepper →Beef, garlic, ginger, soy sauce, and a hot pan cover a lot of ground on a Tuesday. Once the sauce hits the skillet, dinner is usually eight minutes out.
Cooks on Pepper reach for these when the takeout order feels like too much money and too long a wait, or when there's a pound of ground beef in the fridge and nothing planned.
Every recipe here leans on beef and a skillet: Mongolian Beef Noodles, One Pot Ground Mongolian Beef Ramen, Slow Cooker Mongolian Beef for a hands-off day, Broccoli Beef Stir Fry, Szechuan Noodles With Spicy Beef Sauce, and a Spicy Beef Rice Bowl.
Slice the steak thin
Freeze flank or sirloin for 20 minutes, then cut across the grain about 1/4 inch thick so it stays tender in a fast stir fry.
Toss beef in cornstarch
A tablespoon or two of cornstarch on the sliced beef gives you that velvety takeout texture and helps the sauce cling.
Get the pan hot
Heat the skillet 2 to 3 minutes before the beef goes in, and cook in two batches so it sears instead of steaming.
Mix sauce ahead
Stir soy sauce, brown sugar, garlic, and ginger together in a cup before you start; it goes in all at once and thickens in about 1 minute.
