Brown the beef hard
Spread the meat in a hot skillet and leave it alone 3 to 4 minutes before breaking it up, so you get real browned bits instead of gray crumbles.
Salt the zucchini first
Toss sliced zucchini with 1/2 teaspoon salt, let it sit 15 minutes, then blot dry so your bake doesn't come out watery.
Drain most of the fat
With 80/20 beef, pour off all but about a tablespoon of grease before adding cabbage or cream cheese so the sauce clings instead of separating.
Cool before slicing
Let casseroles rest 10 minutes out of the oven so the cheese sets and the squares hold their shape on the plate.
