Open in Pepper →Ground beef thaws fast, browns in ten minutes, and stretches into a full pan of dinner with whatever vegetables are in the crisper. That is why it ends up in the cart every single week.
Cooks on Pepper reach for this collection on the nights they want something hot and filling without bread, rice, or pasta on the side — and without a second trip to the store.
Every recipe here starts with browned beef and goes somewhere: the Mediterranean Ground Beef Skillet with zucchini and cherry tomatoes, Ground Beef Zucchini Bake, Creamed Cabbage and Ground Beef Casserole, Cheesy Ground Beef, Stuffed Bell Peppers, and a batch of Ground Beef Taco Meat for the fridge.
Brown the beef hard
Spread a pound in a hot skillet and leave it alone for 3 to 4 minutes before breaking it up, so it browns instead of steaming.
Salt the zucchini first
Toss sliced zucchini with 1 teaspoon salt and let it drain 20 minutes, then pat dry, or the bake turns watery.
Drain but keep flavor
Pour off the grease from fattier beef, then leave about 1 tablespoon in the pan to cook the onion and garlic.
Rest before serving
Let casseroles sit 10 minutes out of the oven so the cheese sets and the squares come out clean.
