Bake muffins in silicone
Egg muffins stick badly to metal tins. Use silicone cups or grease well, and bake at 350°F for about 20 minutes until the centers are set.
Drain the sausage grease
Pour off all but about 1 tablespoon before adding eggs, or the frittata turns greasy and won't set clean.
Start frittatas on the stove
Cook 4 to 5 minutes in an oven-safe skillet until the edges firm up, then finish in a 375°F oven for 10 to 12 minutes.
Mix pork sausage cold
Keep the ground pork and lard cold while you work in the sage and salt, then let it rest 30 minutes so the seasoning spreads.
