Everything Cut Small Tastes Better Together

A chopped salad is just supper you can eat with a fork, no wrestling with big leaves. When every bite has a little cucumber, a little salami, a little olive, people actually finish the bowl.

Cooks on Pepper reach for these on hot nights when nobody wants the oven on, and for lunches they can pack up the night before and grab on the way out the door.

Every recipe here is a full plate, not a side. There's Greek Salad in a Jar with chicken, Loaded Greek Chickpea Chopped Salad, Keto Antipasto Salad with salami and provolone, Grilled Chicken Greek Salad Bowl, and the La Scala "Kardashian" Chopped Salad.

Quick Tips

  1. 1

    Cut everything one size

Aim for pieces about 1/2 inch so every forkful gets a bit of each thing. It takes 10 minutes and makes the whole bowl taste balanced.

  2. 2

    Dry the lettuce well

Spin or pat romaine and cabbage completely dry before dressing, or the dressing slides off and pools in the bottom.

  3. 3

    Dress right before serving

Toss with dressing in the last 2 minutes. For jar salads, pour the dressing in first and layer greens on top so they stay crisp.

  4. 4

    Salt the onion first

Soak thin-sliced red onion in cold water for 10 minutes to take the bite out, then drain and pat dry.
