Cut everything one size
Aim for pieces about 1/2 inch so every forkful gets a bit of each thing. It takes 10 minutes and makes the whole bowl taste balanced.
Dry the lettuce well
Spin or pat romaine and cabbage completely dry before dressing, or the dressing slides off and pools in the bottom.
Dress right before serving
Toss with dressing in the last 2 minutes. For jar salads, pour the dressing in first and layer greens on top so they stay crisp.
Salt the onion first
Soak thin-sliced red onion in cold water for 10 minutes to take the bite out, then drain and pat dry.
