Open in Pepper →A chuck roast and a few hours is about all it takes. The meat goes in tough and comes out soft enough to pull apart with a fork, and the juice it leaves behind is half the reason to make it.
Cooks on Pepper reach for this collection on the mornings they know dinner needs to cook itself — a roast in the slow cooker before work, rolls and peppers on the counter by six.
Every recipe here starts with beef and ends in a sandwich: Slow Cooker Italian Beef Sandwiches, Chicago Style Italian Beef, Crockpot Italian Beef and Gravy, and Smoked Italian Beef when you want the smoker going.
Sear the roast first
Brown the chuck roast 3 to 4 minutes per side in a hot skillet before it goes in the slow cooker. It deepens the color and flavor of the juice.
Cook it low and slow
Eight to ten hours on low beats four on high for chuck roast. The connective tissue needs time to break down and shred clean.
Keep the juice
Never drain the pot. Shred the beef right back into the cooking liquid and let it sit 20 minutes so it soaks up the seasoning.
Toast the rolls
Split hoagie rolls and toast them 2 to 3 minutes under the broiler so they hold up when you dip them in the jus.
