Open in Pepper →A cookie made with oats, mashed banana and peanut butter is really just oatmeal in a different shape, and it travels a lot better. Bake a pan on Sunday and there's something to hand a kid on the way out the door all week.
Cooks on Pepper reach for these when mornings are rushed, when the bananas on the counter have gone spotty, or when somebody wants a snack at three in the afternoon that isn't out of a wrapper.
Every recipe here leans on simple pantry stuff: Healthy breakfast oatmeal cookies, Breakfast Cookies with oats and honey, chocolate covered peanut butter cookies made with almond flour and dates, Double Chocolate Oatmeal Cookies, and a Single Serve Birthday Cake Protein Cookie for when you only want one.
Use very ripe bananas
Spotty, soft bananas mash smooth and sweeten the dough on their own. Two medium bananas give you about one cup mashed.
Let the dough rest
Oats soak up moisture as they sit, so give the dough 10 minutes on the counter before scooping. The cookies hold their shape much better.
Flatten before baking
These doughs barely spread, so press each scoop to about a half inch thick with damp fingers or the back of a spoon.
Pull them slightly underbaked
Take them out at 10 to 12 minutes while the centers still look soft, then cool on the pan 5 minutes so they set up chewy instead of dry.
