Crock Pot Hamburger Potato Casserole

A hearty and cheesy potato casserole cooked slowly in a crockpot, layered with seasoned ground beef, potatoes, and cheese.

Ingredients

  • 1 lb ground beef
  • 4-5 medium, thinly sliced russet or Yukon gold potatoes
  • 1, chopped medium onion
  • 2 cups, divided shredded cheddar cheese
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • to taste salt and pepper

Instructions

  1. 1Brown the beef and onion: Cook the ground beef and chopped onion in a skillet over medium heat until browned and no pink remains, about 5-7 minutes. Drain excess fat.
  2. 2Prepare the potatoes: Wash and thinly slice the potatoes evenly to about 1/8 inch thick.
  3. 3Layer the ingredients: In the crockpot, layer half the potatoes, then half the cooked beef and onion mixture, followed by a portion of shredded cheddar cheese. Repeat with remaining potatoes, beef, and cheese.
  4. 4Mix and pour sauce: In a bowl, whisk together the cream of mushroom soup, milk, garlic powder, salt, and pepper until smooth. Pour this evenly over the layered ingredients.
  5. 5Cook on low: Cover and cook for 6 to 8 hours until potatoes are tender and cheese is bubbly.
  6. 6Add finishing cheese: About 15 minutes before serving, sprinkle remaining cheddar cheese on top, cover to melt. Garnish with chopped parsley or chives if desired.
