Open in Pepper →A pound of ground beef and a few potatoes will stretch further than just about anything else in the kitchen. Add an onion and some cheese and you've got supper on the table without a trip to the store.
Cooks on Pepper reach for this collection on the nights the grocery budget is thin, the day got away from them, or there's a hungry crowd coming in from ball practice.
Every recipe here leans on that same pair: Crock Pot Hamburger Potato Casserole, Cheesy Ground Beef and Potato Skillet, plain Ground Beef and Potatoes, an Easy One-Pot Ground Beef and Potato Taco Skillet, Cheesy French Onion Hamburger Casserole, and two takes on shepherd's pie.
Slice potatoes thin
Cut russets about 1/8 inch thick so they cook through in a casserole. Thick slices can stay crunchy even after 4 hours in the slow cooker.
Brown the beef first
Cook the ground beef 6 to 8 minutes until no pink remains, then drain the grease so the casserole doesn't turn oily.
Cover the skillet
Put a lid on for the last 12 to 15 minutes so steam softens the potatoes, then uncover and add cheese for 2 minutes.
Rest before serving
Let a casserole sit 10 minutes off the heat so the sauce sets up and the slices hold together on the plate.
