Ingredients

  • Shredded Chicken
  • BBQ sauce
  • 2-4 Sweet potatoes
  • Crispy fried onions
  • Ranch
  • Green onion or chives
  • Cheddar cheese
  • Butter
  • Salt pepper
  • Garlic

Instructions

  1. 1Wash sweet potatoes and cook until soft. You can boil, bake or microwave to achieve this. Once cooked wait to cool and slice each potato in half, and scoop out the meat of the potato trying your best to conserve the skin. You may need to leave some potato left to keep its form. Place Into a bowl.
  2. 2Mash snd Stir in butter, salt, pepper, and garlic into potatoes. And then place back into each potato, ensuring to leave an indent/space in the middle for filling. You might have some leftover potatoe mixture.
  3. 3To make the filling, you can use rotisserie chicken to make it easy, combine the chicken with green onion, cheddar cheese, and bbq sauce.
  4. 4Place the filling inside the potato where you made a space for it. Top with more cheese and then place in the oven at 375 for at least 5-10 minutes. Or until cheese is melted.
  5. 5Serve with crispy fried onions on top, more bbq and ranch and enjoy!
