Ingredients

  • 12 oz Chicken (Boneless/Skinless) shredded
  • 1/3 cup lemon juice fresh
  • 2 tbsp Olive Oil
  • 2 tbsp Small onion diced
  • 2 Carrots medium sliced thin
  • 3-4 Garlic cloves minced
  • 1/2 cup Rice
  • 8 cup Chicken stock
  • 2 Bay Leaf
  • 1 Lemon zest
  • 2 tbsp Dill
  • 2 Egg

Instructions

  1. 1Heat olive oil over medium heat in a large pot. Add onions and carrots, sautéing until tender and onions are translucent. About 5 minutes. Add garlic and a pinch of lemon zest, sauté until fragrant. About 1 minute.
  2. 2Add in rice and stir until coated.
  3. 3Add chicken stock and bay leaves. Consistently simmer for 10 minutes.
  4. 4Once rice is tender, add shredded chicken and adjust heat as needed to maintain a simmer.
  5. 5In a medium bowl, combine fresh lemon juice and eggs. Whisk to combine until frothy.
  6. 6Remove soup from heat. Ladle 2 cups of broth SLOWLY into the lemon/egg mixture to temper. Introduce the bowl of broth, lemon juice & eggs into the pot of soup while stirring to combine. Add dill.
  7. 7Add lemon zest, salt and pepper to taste.
  8. 8Serve and enjoy!
