Authentic Greek Chicken Gyros with Homemade Tzatziki

Ingredients

  • 4 chicken thighs, boneless and skinless
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • juice of 1 lemon lemon juice
  • to taste salt and pepper
  • 4 pita bread
  • 1 small red onion, thinly sliced
  • 2 tomatoes, sliced
  • 1/2 cucumber, sliced
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh dill, chopped

Instructions

  1. 1Combine chicken thighs with olive oil, garlic, oregano, lemon juice, salt, and pepper in a bowl. Marinate for at least 30 minutes.
  2. 2Grill the chicken over medium-high heat until cooked through, about 5-7 minutes per side.
  3. 3Prepare the tzatziki by mixing Greek yogurt, grated cucumber, garlic, olive oil, dill, salt, and pepper. Chill until ready to use.
  4. 4Warm the pita bread. Slice the cooked chicken into strips.
  5. 5Assemble the gyros by spreading tzatziki on the pita, adding chicken, and topping with onion, tomato, and cucumber slices.
