Open in Pepper →Two things you already have in the cabinet turn plain chicken into something everybody at the table finishes. Lemon pepper browns up dark and peppery on the skin, and the lemon keeps it from tasting flat.
Cooks on Pepper reach for these on the nights when supper has to be quick but not boring — a pan of thighs in the oven, wings for the game, skewers on the grill when it's too hot to cook inside.
Every recipe here leans on that same seasoning in a different way: Honey Garlic Lemon Pepper Chicken Thighs, lemon pepper chicken wings, Lemon Pepper Chicken with Butter Sauce, Grilled Lemon Pepper Chicken, a Meal Prep Lemon Pepper Chicken & Rice Bowl, and a skillet with squash and zucchini.
Pat the chicken dry
Blot every piece with paper towels before seasoning so the skin crisps instead of steams. Two minutes here makes a real difference on wings and thighs.
Go easy on salt
Most lemon pepper blends are already salty, so taste before you add more. Start with 1 teaspoon of seasoning per pound of chicken.
Finish with fresh lemon
Squeeze half a lemon over the chicken right when it comes off the heat. The bottled seasoning gives pepper, the fresh juice gives brightness.
Check 165 in the thickest part
Pull breasts at 165°F and thighs closer to 175°F, then rest 5 minutes before slicing so the juices stay put.
