Check your broth labels
Many bouillon cubes and broths use wheat as a thickener or filler. Read the label once, buy the brand that works, and keep two boxes on hand.
Sear the beef first
Give stewing beef 3 to 4 minutes per side in a hot skillet before it goes in the crock. It's the difference between gray meat and real browned flavor.
Add dairy at the end
Stir in heavy cream, Parmesan, or cheddar during the last 20 to 30 minutes so it stays smooth instead of breaking over 8 hours.
Thicken with cornstarch
For a glossy sauce, whisk 1 tablespoon cornstarch into 2 tablespoons cold water, stir it in, and cook uncovered on high for 15 minutes.
