Open in Pepper →A bag of frozen shrimp in the freezer means you always have dinner. It thaws in about 10 minutes under cool water and cooks in 3 to 4, which is faster than almost anything else you can put on a plate.
Cooks on Pepper reach for these on the nights nothing got taken out to thaw, when everyone is hungry at 6 and the meat is still a brick.
Every recipe here starts with shrimp and ends on the table fast: Spicy Lemon Garlic Butter Shrimp, Cajun Shrimp and Sausage with Garlic Sauce, Garlic Butter Shrimp with Pasta, Garlic Broccoli Shrimp Stir Fry, and Shrimp Tacos with Creamy Cilantro Sauce.
Thaw in cold water
Put frozen shrimp in a colander under cool running water for 5 to 10 minutes. Never use hot water or the edges turn rubbery before the center thaws.
Pat them bone dry
Blot thawed shrimp with paper towels before they hit the pan. Wet shrimp steam instead of searing and water will break a butter sauce.
Cook just 3 minutes
Shrimp are done when they curl into a loose C and turn pink, usually 90 seconds per side in a hot skillet. A tight O means they went too far.
Pull before the sauce
Take the shrimp out, finish the garlic butter or cream sauce, then stir them back in for the last 30 seconds so they stay tender.
