Toast the bread first
Bake the cut halves plain at 400°F for 5 minutes before saucing. It keeps the middle from going soggy under the sauce.
Go easy on sauce
About 1/3 cup per half is plenty. Any more and it runs off the sides and pools on the pan.
Shred your own cheese
A block of mozzarella grated fresh melts smoother than bagged shreds, which are coated to keep from sticking.
Cool before slicing
Let it sit 3 to 5 minutes out of the oven so the cheese sets and stays put when you cut it.
