Let the dough double
Yeast dough needs a warm spot and about 1 to 1 1/2 hours to double in size. Poke it — if the dent stays, it's ready to shape.
Cut the dough with scissors
For pull-apart loaves, snip the dough into 1-inch pieces so each one grabs plenty of butter and cinnamon sugar.
Butter then sugar
Dip pieces in about 1/2 cup melted butter first, then roll in cinnamon sugar so the coating actually sticks instead of sliding off.
Cool before slicing
Give the loaf 15 to 20 minutes in the pan, then turn it out. Slicing too soon lets the cinnamon swirl smear and tear.
