Cooking Supper Just For Yourself

Cooking for one shouldn't mean standing at the counter with a bowl of cereal. A single chicken breast, a couple of potatoes, and a hot pan turn into a real plate in about the same time it takes to wait on takeout.

Cooks on Pepper reach for these on the nights nobody else is home, when the kids are gone or the shift ran late and they still want something hot that doesn't leave a week of leftovers.

Every recipe here scales down easy: Easy Veggies and Sausage dinner, Garlic Parmesan Sheet Pan Dinner, Steak Sheet Pan Dinner, Salisbury Steaks, One Pot Chicken Pot Pie Orzo Dinner, Ribeye Steak Dinner, and a pan of Dinner rolls if you want bread with it.

Quick Tips

  1. 1

    Use a small sheet pan

A quarter sheet, about 9 by 13 inches, keeps one chicken breast and a handful of potatoes close together so they brown instead of steam.

  2. 2

    Cut potatoes smaller

Halve mini gold potatoes or cut larger ones into 1-inch pieces so they finish in the same 25 to 30 minutes as the chicken or asparagus.

  3. 3

    Get the pan hot first

For ribeye or shrimp, heat the skillet 2 to 3 minutes over medium-high before anything goes in. Shrimp need only 2 minutes a side.

  4. 4

    Rest steak before cutting

Let a ribeye or chuck steak sit 5 to 10 minutes off the heat so the juices stay in the meat and not on the plate.
