Use a small sheet pan
A quarter sheet, about 9 by 13 inches, keeps one chicken breast and a handful of potatoes close together so they brown instead of steam.
Cut potatoes smaller
Halve mini gold potatoes or cut larger ones into 1-inch pieces so they finish in the same 25 to 30 minutes as the chicken or asparagus.
Get the pan hot first
For ribeye or shrimp, heat the skillet 2 to 3 minutes over medium-high before anything goes in. Shrimp need only 2 minutes a side.
Rest steak before cutting
Let a ribeye or chuck steak sit 5 to 10 minutes off the heat so the juices stay in the meat and not on the plate.
