Cut squash safely
Microwave a whole acorn squash for 2 minutes to soften the skin, then halve it on a flat cut side so it can't roll.
Roast cut side down
Place halves face down for the first 20 minutes to steam the flesh, then flip and finish 15 minutes to brown.
Leave delicata skin on
Delicata skin gets tender in the oven, so slice into half-moons about 1/2 inch thick and skip the peeling.
Add honey at the end
Brush honey or brown sugar on during the last 10 minutes so it glazes instead of scorching.
