Open in Pepper →A bowl of cream cheese, sour cream, ranch, and shredded cheddar takes about ten minutes and disappears faster than anything else on the table. It's the thing you can stir together while the kids are getting their shoes on.
Cooks on Pepper reach for these when someone says "bring an appetizer" the night before, on game days, and for the Friday nights when chips and dip and a movie count as dinner.
Every recipe here is a version worth making: Boat Dip with Rotel and ranch mix, Cheddar Ranch Crack Dip loaded with bacon bits, Million Dollar Crack Dip, Christie's Crack Dip with shredded chicken, a High Protein Crack Dip made with Greek yogurt, Creamy Bacon Ranch Dip, and a dairy-free spicy version.
Soften the cream cheese
Leave it on the counter 30 to 45 minutes, or microwave 20 seconds. Cold cream cheese leaves lumps you can't stir out.
Drain the Rotel well
Press the tomatoes in a strainer for a minute or two, or that 10-ounce can will make the whole bowl watery.
Chill before serving
Give it at least 1 hour in the fridge so the ranch seasoning and garlic have time to come through.
Add bacon at the end
Stir in most of the bacon bits, then scatter the last 2 tablespoons on top right before serving so they stay crisp.
