Ingredients

  • 2 cups Whole Milk Ricotta Cheese
  • 1 cup Mascarpone
  • 1 cup Confectioners' Sugar
  • 1 tsp Vanilla Extract
  • 1 cup Mini Chocolate Chips
  • 2 cup Broken Waffle Cones or Cannoli Chips

Instructions

  1. 1*OPTIONAL STEP* I find that every ricotta brand is different. If you have one that is more watery I would suggest doing this step……. Place mesh strainer on top of a medium bowl. Line strainer with cheesecloth. Transfer ricotta cheese to the cheesecloth and use a spatula to press the cheese against the cloth and drain the liquid. Discard the excess liquid that dripped.
  2. 2In a medium bowl using a hand mixer, beat ricotta cheese and mascarpone together until smooth. Slowly add the confectioners' sugar and vanilla. Continue to mix until the sugar is completely incorporated. With a spatula or spoon, fold the mini chocolate chips into the cheese mixture
  3. 3Cover the bowl and chill in the fridge for at least 10 minutes or up to two days. Before serving, sprinkle any remaining chocolate chips on top if desired. Serve with broken waffle cones (1-2 boxes) or cannoli chips to scoop and enjoy the cannoli dip.

The Dessert You Stir Together In Minutes

Cannoli dip is all the good part of a cannoli without the frying or the piping bag. You whisk ricotta with a little sugar, scoop it into a bowl, and set out broken shells or cookies for scooping.

    Drain the ricotta first

    Set the ricotta in a fine strainer over a bowl for 30 minutes, or press it in cheesecloth, so the dip sets up thick instead of watery.

    Use room temperature cheese

    Let cream cheese and mascarpone sit out 30 to 45 minutes before mixing, or you will fight lumps the whole time.

    Chill before serving

    Cover and refrigerate at least 1 hour so the sugar dissolves and the flavor pulls together.

    Add chips at the end

    Fold in mini chocolate chips just before serving and save a tablespoon or two for the top so they stay crisp.
