Drain the ricotta first
Set the ricotta in a fine strainer over a bowl for 30 minutes, or press it in cheesecloth, so the dip sets up thick instead of watery.
Use room temperature cheese
Let cream cheese and mascarpone sit out 30 to 45 minutes before mixing, or you will fight lumps the whole time.
Chill before serving
Cover and refrigerate at least 1 hour so the sugar dissolves and the flavor pulls together.
Add chips at the end
Fold in mini chocolate chips just before serving and save a tablespoon or two for the top so they stay crisp.
