Open in Pepper →Some nights you don't want the stove on at all. A bowl of crab salad, cold from the fridge, spooned onto crackers or bread or a bed of lettuce, gets everybody fed without heating up the kitchen.

Chill it an hour
Mix it, cover it, and let it sit in the fridge at least 1 hour so the celery, onion and mayo come together.
Dice celery small
Cut celery into 1/4-inch pieces so you get crunch in every bite instead of long stringy chunks.
Rinse the pasta cold
For pasta versions, drain the shells and rinse under cold water 30 seconds so they stop cooking and don't soak up all the mayo.
Add lemon last
Stir in 1 tablespoon lemon juice right before serving to keep the crab tasting fresh and not flat.
