Gilmore Girls Coffee Cake Cookies

These cookies not only look great, they taste amazing too! They are a cinnamon base cookie, streusel topping and drizzled with icing. I followed the recipe for these cookies from @thepalatablelife online and they do taste as good as they look!

Ingredients

  • FOR THE DOUGH
  • 1/2 cup Butter
  • 1/2 cup Vegetable oil
  • 1 cup Brown Sugar
  • 1 egg Egg
  • 1 tsp Vanilla
  • 2 tsp Cinnamon
  • 1/2 tsp Baking soda
  • 1/2 tsp Baking powder
  • 1/2 tsp Salt
  • 2 1/4 cup Flour
  • FOR THE STREUSEL
  • 1/4 cup Butter
  • 1/4 cup Brown sugar
  • 1/3 to 1/2 cup Flour
  • 1/2 tsp Cinnamon
  • A pinch Salt
  • FOR THE ICING
  • 1/2 cup Powdered sugar
  • 1 tbsp Milk
  • A splash Vanilla

Instructions

  1. 1This is the link to the recipe I followed! https://www.thepalatablelife.com/gilmore-girls-coffee-cake-cookie/
  2. 2To make the dough, combine the butter, oil and dark brown sugar. Mix for a couple minutes until it is smooth. Add the egg and vanilla and mix again. Add the remaining ingredients and mix until just combined.
  3. 3To make the streusel, combine all the ingredients in a bowl and mix with a spoon or your hand. Start with 1/3 cup of flour. The mixture should stick together, but should also crumble when you run it through your fingers. If it isn't crumbling, add 1 tbsp additions of flour until it crumbles.
  4. 4Using a large cookie scoop, scoop a ball of dough onto a lined baking sheet. Using a spoon or your fingers, make an indent on the top of the dough. Sprinkle a couple tablespoons of the streusel on the top of the cookie, into the indent.
  5. 5Bake the cookies at 350 for 10-12 minutes. While they are baking, make the icing. Combine the powdered sugar, milk, and vanilla in a small bowl and whisk until it's smooth and runny. Once the cookies have cooled slightly, drizzle on lots of icing! Enjoy!

The Crumb Topping Is The Whole Point

A good coffee cake is soft under a thick layer of cinnamon crumb, and it keeps on the counter for days. You can bake it the night before and still have something worth putting out with coffee in the morning.

Cooks on Pepper reach for these on weekend mornings, for church breakfasts and school potlucks, and any time company is coming and there's nothing sweet in the house.

Every recipe here is a real one someone bakes: Gilmore Girls Coffee Cake Cookies, Pumpkin Coffee Cake with Maple Glaze, plain Cinnamon Coffee Cake, pumpkin coffee cake muffins, a gluten free version, and a buttermilk pumpkin crumble.

Quick Tips

  1. 1

    Keep the butter cold

Cut cold butter into the flour and sugar with your fingers until it clumps in pea-sized pieces. Warm butter melts into paste and you lose the crumb.

  2. 2

    Save half the streusel

Layer half the crumb mixture in the middle of the batter and the rest on top so you get cinnamon in every bite.

  3. 3

    Check at 35 minutes

Test the center with a toothpick around 35 minutes; streusel-topped cakes can look done on top while the middle is still wet.

  4. 4

    Cool before glazing

Let the cake sit 20 to 30 minutes before you drizzle maple glaze, or it soaks straight in and disappears.
