Lemon cheesecake roll with lemon glaze

I’m not really sure what to call these. They are made with the Hawaiian dough from my last post but filled like a danish. They have baked lemon cheesecake in the center and a lemon glaze on top. They are the product of boredom and a sweet craving lol. They are AMAZING!!

Ingredients

  • Recipe is my previous post Hawaiian sweet roll dough
  • Lemon Cheesecake filling:
  • 1 (8oz) block Softened cream cheese
  • 1 lemon Lemon zest
  • 1 Large egg
  • 1 Egg yolk
  • 1/2 tsp Vanilla
  • Egg wash:
  • 1 Egg white
  • 2 tbsp Honey
  • Lemon Glaze:
  • 2 cups Powdered sugar
  • 1 lemon Juice of lemon
  • 1/2 tsp Vanilla
  • 2-4 tbsp Milk

Instructions

  1. 1Prepare dough and let rise through the first rise. Recipe for the dough is in my post before this one. Preheat oven to 350.
  2. 2In a large bowl, beat cream cheese. Add in all other ingredients and blend until smooth.
  3. 3On a lightly floured surface, roll out the dough until about 20x15. Dough should be thin.
  4. 4Trim edges with a sharp knife or pizza cutter so that you have a (fairly) straight rectangle.
  5. 5Cut out 15 squares. You can measure this if you like but I just eyeball it.
  6. 6Take a square and pull out each corner, kind of stretching it a little, the folding it so that the tip of the corner is in the middle of the square. When all four corners have been folded in, press them firmly into the dough. Do this with all the squares and place them on a parchment lined baking sheet.
  7. 7In the center of each square, spoon or pipe about 2 tbsp of the cheesecake filling.
  8. 8Mix together the egg wash and brush all exposed areas of the dough.
  9. 9Bake for 20-25 minutes. Turning the pan half way through. Dough should be golden brown.
  10. 10Mix together all glaze ingredients. Starting with 2 tbsp of milk. Glaze should be runny but still thick.
  11. 11As soon as you remove the rolls from the oven, using a fork, drizzle glaze over the top.
  12. 12Allow to cool for a couple minutes before eating. Enjoy!

Cake, the Mediterranean Way

Mediterranean baking swaps butter for olive oil, refined sugar for honey, and heavy frostings for a dust of powdered sugar — the result is a cake that feels lighter but tastes more complex.

Cooks on Pepper love this collection because every recipe leans on pantry basics — olive oil, lemon zest, honey, yogurt — and skips the fussy techniques of French pâtisserie.

Every recipe here delivers the tender, moist crumb Mediterranean cakes are known for — the kind of dessert that improves overnight and pairs perfectly with a strong coffee.

Quick Tips

  1. 1

    Use good olive oil

A fruity extra virgin makes a bigger flavor difference in olive oil cake than the flour brand — spend the extra $2.

  2. 2

    Zest before juicing

Zest lemons and oranges first, then juice — reverse order and you'll lose the zest to the juice bowl.

  3. 3

    Yogurt for moisture

Greek yogurt in the batter keeps the crumb tender for days without the cake feeling heavy.

  4. 4

    Skip the frosting

A dust of powdered sugar or a light citrus glaze is more traditional and lets the cake flavor lead.
