Open in Pepper →Cloud bread is about as simple as baking gets — eggs, a little something to hold them together, and air. You beat the whites until they stand up, fold, scoop, and bake, and twenty minutes later you have soft rounds for sandwiches, eggs, or butter and jam.
Cooks on Pepper reach for these when the bread box is empty and nobody wants to run to the store, or when they want something light to go with soup and still have dinner on the table by six.
Every recipe here keeps the list short: the classic Cloud Bread with cream cheese and cream of tartar, Super easy cloud bread with cornstarch, HIGH PROTEIN COTTAGE CHEESE CLOUD BREAD, Cheesy Garlic Cloud Bread for the dinner table, and Cinnamon Swirl Cloud Bread when you want it sweet.
Separate eggs while cold
Cold eggs split cleanly, but let the whites sit out 15 minutes before whipping so they reach full volume.
Whip to stiff peaks
Beat 3 to 5 minutes until the whites hold a peak that does not flop over — soft peaks give you flat, wet rounds.
Fold, do not stir
Add the yolk or cottage cheese mixture in 2 or 3 additions and fold gently with a spatula so you keep the air in.
Cool on the pan
Let the rounds sit 10 minutes on the parchment after baking; they firm up and peel off without tearing.
