Open in Pepper →A pan of chocolate cobbler is the kind of dessert you can start after supper and pull out warm before the dishes are done. You pour hot water over the batter, it looks all wrong, and it comes out of the oven with cake on top and fudge sauce underneath.
Cooks on Pepper reach for this collection on cold nights, on birthdays when nobody wants to fuss with layers and frosting, and any time company calls and says they're on the way.
Every recipe here is chocolate and simple: two takes on Chocolate Cobbler, Classic Homemade Chocolate Pudding Cake, Hot Fudge Chocolate Pudding Cake, Cherry Chocolate Dump Cake, and German Chocolate Dump Cake with toasted pecans and coconut.
Pour the water gently
Pour the hot water over the back of a spoon so it sits on top instead of stirring into the batter. That layer is what turns into the sauce.
Don't stir the topping
Once the sugar and cocoa go over the batter, leave it alone. Stirring mixes the layers and you lose the fudge on the bottom.
Let it rest 10 minutes
Pull it out and set it on the counter for about 10 minutes. The sauce thickens up and won't run all over the plate.
Toast the pecans first
For the German chocolate dump cake, spread the pecans on a sheet pan at 350°F for 6 to 8 minutes until you can smell them.
