Open in Pepper →Peach cobbler is the dessert you can start after supper and still have warm by the time the dishes are done. Butter in the pan, batter poured over, peaches on top, and the oven does the rest.
Cooks on Pepper reach for this collection in peach season when the counter is crowded with fruit, and again in January when a couple of cans will do just fine.
Every recipe here is a real cobbler, from Easy Peach Cobbler and Peach Cobbler Dump Cake to Nan's Peach Cobbler Recipe, Southern Peach Cobbler, Fresh Peach Cobbler, and a Peach cobbler brûlée with a crackly sugar top.
Melt the butter first
Put 1 stick of butter in the baking dish and let it melt in the oven while it preheats to 350°F. That is what gives you crisp, browned edges.
Don't stir the batter in
Pour the batter over the melted butter, then spoon the peaches on top without stirring. The batter rises up around the fruit as it bakes.
Peel peaches with hot water
Drop scored peaches in boiling water for 30 to 45 seconds, then into ice water, and the skins slip right off.
Drain canned peaches partly
Pour off about half the juice from a 29 oz can so the cobbler sets up instead of running soupy.
