Rinse the rice first
Run white or basmati rice under cool water for about 30 seconds until it runs mostly clear so the grains stay separate instead of gummy.
Add lime off heat
Stir in the lime juice and chopped cilantro after the rice has rested 5 minutes off the burner, so the flavor stays fresh and bright.
Let it steam covered
Once the water is absorbed, keep the lid on and the pot off the heat for 10 minutes, then fluff with a fork.
Rest the steak
Give cooked steak 5 minutes on the cutting board before slicing thin against the grain so the juices stay in the meat.
