Open in Pepper →Creamy chicken is the supper you fall back on when the week gets away from you. It stretches a little cooked chicken into a full pan, and it tastes like somebody stayed home all day to make it.
Cooks on Pepper reach for this collection on the nights everybody walks in hungry at once, when there's leftover chicken in the fridge and twenty minutes before the kids need to eat.
Every recipe here leans on that same creamy base: Easy Chicken and Biscuit Pot Pie with frozen vegetables, Chicken and Biscuit Casserole, Crockpot Chicken Over Rice with cream of chicken and cream of mushroom, and a from-scratch Chicken Ala King with green bell pepper.
Use rotisserie chicken
One rotisserie bird gives you about 3 cups of shredded meat, enough for any of these casseroles with no stove time.
Cook the flour first
For the Ala King, stir the flour into melted butter and cook 1 to 2 minutes before adding liquid so the sauce doesn't taste pasty.
Thin the sauce with milk
Canned soup thickens as it bakes, so stir in 1/4 to 1/2 cup milk before it goes in the oven.
Bake biscuits until golden
Give drop biscuits 20 to 25 minutes at 400°F and check the bottom center with a fork so it isn't doughy.
