Use very ripe bananas
Wait until the peels are mostly brown and spotty — those bananas mash smooth and sweeten the loaf without extra sugar.
Slice the butter cold
For cobbler, cut the stick into thin pats and scatter them over the dry cake mix so it browns in patches instead of pooling.
Don't overbake the cookies
Peanut butter cookies pull out at 8 to 10 minutes while the centers still look soft; they finish setting on the hot pan.
Cool bread before slicing
Give banana bread at least 20 minutes in the pan, then finish on a rack, or the middle tears when your knife goes through.
