Open in Pepper →Most nights there's no time to shop for a dessert. A cake you can pull together from butter, sugar, flour and whatever's in the pantry is the one that actually gets made.
Cooks on Pepper reach for these when somebody's birthday snuck up on them, when the kids want something sweet after supper, or when company's coming Sunday and the afternoon is already spoken for.
Every recipe here keeps the list short: witch's cake with cocoa powder, a 1 min chocolate lava mug cake, peach dump cake made from canned peaches and a box of yellow cake mix, banana carrot cake, birthday cake bars, and tres leches cake for when you want to make a fuss.
Soften butter properly
Set the butter out 30 to 45 minutes before you start. Cold butter won't cream with the sugar and you'll get a dense cake.
Stop the mug cake early
Microwave 60 to 70 seconds and pull it while the middle still looks a little wet. It keeps cooking in the mug and turns rubbery fast.
Grease the pan well
For pineapple upside down cake, coat the sides and bottom, then flip it out 5 to 10 minutes after it comes from the oven so the topping doesn't stick.
Cool before slicing
Give bars and squares at least 30 minutes in the pan. Warm cake tears instead of cutting clean.
