Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 medium potatoes, diced
  • 1 small bag frozen green beans or mixed veggies
  • 10.5 ounces (1 can) cream of mushroom soup
  • ¾ cup milk
  • 1 ½ cups shredded cheddar cheese
  • 1 tablespoon butter, melted

Instructions

  1. 1Preheat oven to 375°F and grease a 9×13-inch baking dish.
  2. 2Peel and dice the potatoes. Set aside.
  3. 3Cook ground beef and chopped onion in a skillet over medium heat until browned and onions are soft, about 5-7 minutes. Drain excess grease.
  4. 4Season the beef mixture with garlic powder, onion powder, salt, and black pepper. Mix well.
  5. 5Layer half of the diced potatoes in the prepared dish.
  6. 6Spread half of the cooked beef mixture over the potatoes.
  7. 7Add a layer of vegetables.
  8. 8Repeat with remaining potatoes, beef, and vegetables.
  9. 9In a bowl, mix the cream of mushroom soup with milk until smooth. Add a 1/2 teaspoon each of salt and black pepper. Mix in well. Pour evenly over the assembled layers.
  10. 10Sprinkle shredded cheddar cheese over the top and drizzle with melted butter.
  11. 11Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until bubbly and golden.
  12. 12Let rest for 5-10 minutes. Optionally, sprinkle with parsley before serving.

Why the Best Camping Dinners Prep at Home

The dinners that actually get made at the campsite are the ones already assembled in a foil packet, seasoned in a ziplock, or portioned in a mason jar back in the home kitchen.

Cooks on Pepper build foil packs by the rule of layers: fat on the bottom, hearty veg next, protein on top, seasoning, then seal — 20 minutes on the coals is dinner.

The recipes here are the community's outdoor rotation — the ones that survive a cooler, cook over uneven heat, and taste better under a string of headlamps.

Quick Tips

  1. 1

    Double-layer the foil

Two sheets of heavy-duty foil per packet — one always tears open on the coals.

  2. 2

    Pre-cut at home

Chop onions, potatoes, and peppers in the home kitchen — a picnic table is a bad cutting board.

  3. 3

    Season in a ziplock

Toss meat and veg in a ziplock with oil and spices the night before — one less mess at the site.

  4. 4

    Cook on coals, not flames

Wait for a bed of glowing embers — direct flame burns the outside and leaves the inside raw.
