  • 1/3 cup Vegetable oil
  • 2 Eggs
  • 1 tsp Vanilla
  • 1/4 cup Powdered Sugar

Instructions

  1. 1In a large mixing bowl, stir together dry cake mix, oil, eggs, and vanilla extract until the mixture comes together to form a dough.
  2. 2Cover and refrigerate for 20 minutes to make dough easier to work with for rolling.

  5. 5Cool on pan for 1 minute; remove to a cooling rack and cool completely.

Three Ingredients And You Have Cookies

A box of cake mix, a couple of eggs, and some oil will get you a pan of soft cookies before the oven even feels hot. There's no creaming butter, no measuring flour, and no mixer to wash afterward.

Cooks on Pepper reach for these when the school bake sale is tomorrow morning, when company calls at four o'clock, or when the kids want something sweet and dinner dishes are still in the sink.

Every recipe here starts with a boxed mix: chocolate crinkle cake mix cookies rolled in powdered sugar, red velvet with cream cheese spread, devil's food chocolate chip, cake mix cookie bars baked in one pan, iced white cake mix cookies, and fruity pebbles cereal killer cookies for the kids.

Quick Tips

  1. 1

    Keep the dough stiff

Cake mix dough should hold its shape on the spoon. If it's runny, chill it 20 minutes before scooping.

  2. 2

    Scoop them the same size

Use a 1 1/2-tablespoon cookie scoop so all the cookies finish baking at the same minute.

  3. 3

    Pull them looking underdone

Bake 8 to 10 minutes and take them out while the centers still look soft; they firm up on the hot pan.

  4. 4

    Cool bars before cutting

Let cake mix cookie bars sit in the pan at least 30 minutes, or they'll tear apart when you slice them.
