Brown the sausage first
Slice the smoked sausage into coins and brown it 5 to 6 minutes before anything else, then cook the onion and bell pepper in that fat.
Measure your liquid
Long grain rice wants about 2 cups liquid per cup of rice. Drain canned tomatoes well so the extra juice doesn't throw it off.
Let it sit covered
Once the rice is tender, pull it off the heat and leave the lid on 10 minutes. The grains firm up and quit sticking together.
Taste before more spice
Smoked sausage and boxed rice mixes are already salty, so wait until the last 5 minutes to add Cajun seasoning or salt.
