Ingredients

  • 14 oz Smoked sausage
  • 1 box Zattarains yellow rice
  • 1 can Rotel drained
  • 2 tsp Olive oil
  • 1/3 cup Onion
  • 1 tsp Minced garlic
  • 1 tsp Cajun Seasoning
  • 1 tsp Black pepper
  • 2 1/2 cups Water
  • 3 tbsp Salted butter

Instructions

  1. 1Slice smoked sausage and dice onion
  2. 2Heat olive oil in skillet.
  3. 3Cook sausage in skillet until brown. Drain sausage and set aside.
  4. 4Sauté onion in olive oil left from sausage until translucent.
  5. 5To sautéed onion, add water, butter, rice packet, rotel, garlic and pepper. Heat until boiling.
  6. 6Cover with lid and simmer 15 min.
  7. 7Add cooked sausage, stir, cover and simmer 10 more minutes.

    Slice the smoked sausage into coins and brown it 5 to 6 minutes before anything else, then cook the onion and bell pepper in that fat.

    Long grain rice wants about 2 cups liquid per cup of rice. Drain canned tomatoes well so the extra juice doesn't throw it off.
