Open in Pepper →A bowl of broccoli salad is the rare side you can make in the morning and forget about until dinner. It gets better sitting in the fridge, and it feeds a crowd without heating up the kitchen.
Cooks on Pepper reach for these when there's a potluck on Saturday, a cookout, or a weeknight that needs something cold and crunchy next to grilled chicken.
Every recipe here is a different take on the same idea: the classic Broccoli Salad with sharp cheddar and red onion, Honeycrisp Apple Broccoli Salad with dried cranberries, Cheddar Bacon Ranch Broccoli Salad, Patsy's Broccoli Salad with bacon and boiled eggs, plus Italian, Marinated, and Roasted Broccoli Salad with chickpeas and feta.
Chop the florets small
Cut broccoli into 1-inch pieces so every bite picks up dressing. Big florets stay dry in the middle.
Soak the onion first
Cover chopped red onion with cold water for 10 minutes, then drain. It takes the bite out without losing the crunch.
Let it sit an hour
Dress the salad and chill at least 1 hour so the broccoli softens slightly and the sugar and vinegar mellow into the mayo.
Add bacon at the end
Cook and crumble bacon ahead, but stir it in right before serving so it stays crisp instead of going soft in the dressing.
