Parcook the potatoes
Diced potatoes take 12 to 15 minutes to soften in a skillet. Microwave or boil them 5 minutes first and the browning goes much faster.
Give them room
Spread the potatoes in one layer in a 12-inch skillet and leave them alone 4 to 5 minutes before stirring, or they steam instead of crisping.
Cook bacon first
Render the bacon 6 to 8 minutes, set it aside, then cook the potatoes and brussels in that fat and add the bacon back at the end.
Add eggs at the end
Make wells in the finished hash, crack in the eggs, cover, and cook 4 to 5 minutes for set whites and runny yolks.
