Rinse the beans well
Dump canned black beans in a colander and rinse 30 seconds until the water runs clear, then shake dry so the dressing isn't cloudy.
Soak the red onion
Cover diced red onion with cold water for 10 minutes and drain. It takes the harsh bite out without losing the crunch.
Let it sit 30 minutes
Stir everything together and chill at least 30 minutes so the lime and beans soak into the corn and peppers.
Add mango last
Fold in mango or tomatoes in the final minute of mixing so they hold their shape instead of turning to mush.
