A fresh and vibrant black bean salad with sweet corn, bell peppers, and a zesty lime dressing.

Ingredients

  • 3 ears fresh corn
  • 2 15-ounce cans, rinsed and drained black beans
  • 2, diced red bell peppers
  • 2 cloves, minced garlic
  • 2 tablespoons, minced shallots
  • 2 teaspoons salt
  • ¼ teaspoon cayenne pepper
  • 2 tablespoons sugar
  • 9 tablespoons extra virgin olive oil
  • 1 teaspoon lime zest
  • 6 tablespoons fresh lime juice
  • ½ cup, chopped, plus more for garnish fresh cilantro
  • 2, chopped Hass avocados

Instructions

  1. 1Bring a large pot of salted water to a boil. Boil the corn for 3 to 4 minutes until tender-crisp, then drain and immerse in cold water to stop cooking. Use a serrated knife to cut the kernels off the cobs.
  2. 2Combine all ingredients except for avocados in a large bowl and mix well. Cover and chill for a few hours or overnight.
  3. 3Right before serving, add the chopped avocados and gently mix to combine, being careful not to mash them. Garnish with additional chopped cilantro if desired. Serve at room temperature.
  4. 4If you’d like to spice it up, you could add a jalapeño or two

    Rinse the beans well

    Dump canned black beans in a colander and rinse 30 seconds until the water runs clear, then shake dry so the dressing isn't cloudy.

    Soak the red onion

    Cover diced red onion with cold water for 10 minutes and drain. It takes the harsh bite out without losing the crunch.

    Let it sit 30 minutes

    Stir everything together and chill at least 30 minutes so the lime and beans soak into the corn and peppers.

    Add mango last

    Fold in mango or tomatoes in the final minute of mixing so they hold their shape instead of turning to mush.
