Wait for black spots
Bananas should be heavily speckled or nearly black — that's when the starch has turned to sugar. If yours are still yellow, bake them at 300°F for 15 minutes and let them cool.
Toast the walnuts
Spread walnuts on a dry sheet pan and toast at 350°F for 6 to 8 minutes until you can smell them. It keeps them from tasting soft and bland in the batter.
Stop stirring early
Mix only until the flour disappears, about 10 to 12 strokes. Overworked batter makes a tough, rubbery loaf with tunnels through the middle.
Cool before slicing
Let the loaf sit in the pan 10 minutes, then finish cooling on a rack at least 30 minutes. Warm banana bread tears and gums up under the knife.
