Oven Baked Sweet Potato

I make these sweet potatoes as a meat alternative, usually for tacos. So good for breakfast or a side too!

Ingredients

  • 1 Large sweet potato
  • 2 tbsp Melted Coconut Oil
  • 2 tbsp Brown Sugar
  • 1 tbsp Salt
  • 1 tbsp Pepper

Instructions

  1. 1Preheat oven to 400F, cut sweet potato into small cubes
  2. 2In medium sized bowl, combine sweet potato and melted coconut oil and stir
  3. 3Add 2 heaping tbsp of brown sugar, salt, and pepper over sweet potatoes, stir to combine
  4. 4Once seasonings ar evenly coated, spread over a baking sheet and bake in oven for 20-25 minutes
  5. 5Once potatoes are starting to crisp, remove from oven and let cool. Use as side dish, meat alternative, snack! Good hot or cold

    Pierce before baking

    Poke each potato 6 to 8 times with a fork so steam escapes and the skin doesn't split open in the oven.

    Line the pan

    Sugars leak out and burn on, so set the potatoes on a foil-lined sheet at 400°F and save yourself the scrubbing.

    Pick even sizes

    Choose potatoes close to the same weight, around 12 ounces each, so they all finish in the same 45 to 60 minutes.

    Test with a knife
