Pierce before baking
Poke each potato 6 to 8 times with a fork so steam escapes and the skin doesn't split open in the oven.
Line the pan
Sugars leak out and burn on, so set the potatoes on a foil-lined sheet at 400°F and save yourself the scrubbing.
Pick even sizes
Choose potatoes close to the same weight, around 12 ounces each, so they all finish in the same 45 to 60 minutes.
Test with a knife
Slide a paring knife into the thickest part; if it goes in with no resistance, they're done, and 10 more minutes only makes them sweeter.
