Check the avocado stem
Pop off the little stem nub — green underneath means it's ready, brown means it's past it. A ripe one gives slightly when you press near the top.
Toast the bread dark
Sourdough holds up best. Give it an extra minute so the crust stays crisp under wet avocado instead of going soggy in 2 minutes.
Salt and acid first
Mash the avocado with a good pinch of salt and 1/2 a squeeze of lemon before it hits the bread — it seasons all the way through and slows browning.
Poach eggs in vinegar water
Add 1 tablespoon of white vinegar to simmering water, swirl, and slide the egg in for 3 minutes for a runny yolk.
