Cut them the same size
Aim for fries about 1/4 inch thick or rounds about 1/2 inch. Uneven pieces mean some burn while others stay soft.
Soak the fries first
Cover cut fries with cold water for 30 minutes, then dry them well. The rinsed-off starch is what keeps them from going limp.
Cook in one layer
Fill the basket no more than two-thirds full and work in two batches if you need to. Piled-up potatoes steam instead of crisping.
Shake the basket twice
Give it a good shake every 5 to 6 minutes so the sides that were touching get browned too.
