Open in Pepper →Broccoli is the side dish you can count on, and the air fryer is what finally makes it taste like something the family asks for again. Hot air, a little oil, and those browned, almost-crunchy tips do the work.
Cooks on Pepper reach for this collection on the nights when dinner is already half-decided — a chicken breast in the oven, a pot of rice going — and they need one good vegetable in 15 minutes flat.
Every recipe here is simple and repeatable: garlic parmesan roasted broccoli, lemon parmesan roasted broccoli, roasted broccoli and cauliflower when you want two vegetables at once, and crispy air fryer broccoli with just olive oil and garlic powder.
Dry the florets well
Pat washed broccoli completely dry with a towel before oiling. Wet florets steam instead of crisping, and you lose those browned tips.
Cut florets the same size
Aim for pieces about 1 to 1 1/2 inches across so everything finishes together. Halve any thick stems so they cook through.
Shake the basket halfway
Toss or shake at the 5-minute mark of a 10- to 12-minute cook so the edges brown evenly instead of burning on one side.
Add cheese at the end
Stir in parmesan during the last 2 minutes so it melts and clings without scorching. Squeeze the lemon on after it comes out.
