A delicious and creamy one-pot meal featuring tender chicken, broccoli, and orzo pasta in a cheesy cheddar sauce.

Ingredients

  • 1 tablespoon olive oil
  • 1 lb boneless skinless chicken breasts
  • to taste salt and pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1 1/2 cups orzo pasta
  • 3 cups low-sodium chicken broth
  • 2 cups fresh broccoli florets
  • 1 cup milk (whole or 2%)
  • 1 1/2 cups shredded sharp cheddar cheese
  • 2 tablespoons cream cheese
  • 1/4 cup grated Parmesan cheese
  • optional fresh parsley, for garnish

Instructions

  1. 1Heat olive oil in a large deep skillet or pot over medium-high heat. Add diced chicken, season with garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for 5–6 minutes, stirring occasionally, until browned and cooked through. Remove and set aside.
  2. 2In the same skillet, add orzo and toast for 1–2 minutes until lightly golden.
  3. 3Pour in chicken broth and stir, scraping up any browned bits. Bring to a boil.
  4. 4Reduce heat to medium-low. Add broccoli, cover, and simmer for 8–10 minutes until orzo is tender and most of the liquid is absorbed.
  5. 5Stir in milk, cooked chicken, cheddar cheese, cream cheese, and Parmesan. Mix until everything is creamy and combined.
  6. 6Taste and adjust seasoning if needed. Garnish with chopped parsley before serving.
